Characteristics

– Cap ochre-colored to reddish orange, with irregular inrolled margin.
– Spines free to adnate, not decurrent, whitish to pale orange-pink, fragile.
– Stem white to pale reddish-yellow, usually centrally positioned.
– Taste mild to slightly bitter.

Ecology

Grows in both deciduous and coniferous forests.

Notes

Suitable for all types of cooking. Best cooked fresh, or frozen for later use. Less suitable for drying, as it can become bitter in taste.

Terracotta Hedgehog agg. is used here as a collective name for several closely related and difficult-to-separate species. All Hydnum-species are edible.

Similar species

H. repandum has decurrent spines and are typically larger and paler.
